Poquito was founded by Niamh Molloy, a Waterford native, who spent over twenty years living and working in the United States. After returning to Ireland, her love for good food—shaped by her time in Seattle and New York—inspired her to create Poquito. Through her passion for cooking and travel, Niamh brings the flavors of her experiences to life, all while offering a warm, welcoming atmosphere that makes Poquito feel like home.
